Ok, maybe I'm confused on this but have to ask..... Stay with me, it's a long question.

My setup was an AV receiver running a couple shelf speakers with a dvd player and video out to the projector.

I just bought, and should be receiving this Friday, a set of B-52 Matrix 200 PA system.
So can I do away with the AV receiver now since the speakers have an amp?
If so, then I have to get a few adapters right? Left/Right sound to the 3.4mm adapter and component on the DVD/blue-ray side to the projector.

But what about game systems? Will those connect to the PA and projector the same way??

If your receiver has pre outs for all the channels, you could still use it. If not, an inexpensive mixer would work best.

Is this the 3-piece unit (http://www.b-52pro.com/products/Matrix200.html)?  If so, you can run audio just as you suggest into the stereo input jack on channel 5 and use the level controls offered by the Matrix 200. 

Video may be connected directly from the DVD player to the PJ, also as you suggest so all is good.  No need for the AV receiver unless you want to use it to switch video or use the remote control to set audio level (assuming it has a variable level pre amp out).  Then you would need to weigh the convenience of switching in the receiver plus the hassle of carrying it outside vs. cable swapping.

In short, I think once you get the correct cables, you should be all set.
